Timon of Athens : The Cuisine
Chef Pat Sheerin of Trencherman presents a three course tasting menu of Greek flavors, inspired by Timon of Athens. The meal pairs flavors that are “loyal” to one another, just as Flavius is to Timon. To symbolize Timon’s descent into despair, Chef Sheerin incorporates elements of bitterness and darkness. Just as Timon discovers gold in the darkness, the diner will unearth “buried” saffron potatoes. The meal ends on a cold note, a nod to Timon’s shunning of society.

Chef Pat Sheerin
A graduate of the French Culinary Institute and Michigan State University’s School of Hospitality Business, Chef Patrick Sheerin worked his way through some of Chicago’s more elite kitchens, including the Four Seasons Hotel, Naha and Everest, in both savory and pastry positions. His next move would last eight years, working his way to executive chef of The Signature Room at the 95th. Sheerin launched the wildly popular and critically acclaimed Trenchermen in Wicker Park in July 2012.

In the 1920's, the Trenchermen building opened as the Luxor Russian Baths. Through the middle of the century, the place remained a spot to steam, grab a drink and have a bite. Inspired by this idea of a meeting place for the community, Trenchermen was born in 2012. Today, Chef Pat Sheerin gives a touch of fine dining flare to the heartiest of dishes. From a casual night at the bar to a romantic dinner in the dining room, Trenchermen remains a social center for the neighborhood
